Guinness Burgers
5lbs of beef mince,
1 small onion finely chopped,
1 clove of garlic grated,
¼ can of Guinness draught
2 tbsp tomato sauce or paste,
salt,
ground black pepper
Put all the ingredients in a bowl, add half the Guinness
and mix well.
Roll into 10 burger shapes
Place the burgers onto a hot BBQ and cook for 6-7 minutes
Brush the burgers with the remaining Guinness
Turn burgers and cook for a further 6-7 minutes
Serve in a warm bun with all your favourite trimmings
*These can be made on a pan instead of a bbq

Irish Porter Cake
450g plain flour
1 tsp grated nutmeg
1 tsp mixed spice
1 tsp baking powder
pinch of salt
225g butter
225g brown sugar
450g raisins
75g candied peel
2 eggs
1 x 330ml bottle of porter/stout (e.g. Guinness)
Preheat oven to 180c/350f. Line the sides & base of a 20cm round
cake tin with greaseproof paper. Sieve the first four ingredients
together. Rub in the butter, then stir in the sugar, raisins & candied
peel. Whisk the porter/stout & the eggs together. Pour into the dry
ingredients & mix well. Empty into the prepared tin & bake for about
2 hours. The cake is cooked when a skewer inserted into the centre
comes out clean. Allow to sit in the tin for 20 minutes before turning
out onto a wire rack.
