Irish Soda Bread
400g flour
350mls buttermilk
350mls buttermilk
1 tsp bicarbonate of soda
1 tsp salt
1 tsp caster sugar
1 tsp caster sugar
Preheat oven to 230c. Put all the dry ingredients
into a large bowl & mix together. Add milk & bring
the mixture together with an outstretched hand. Pat
the dough into a round shape & place on a lightly
floured tray. Cut a cross into the top. Bake for 15mins
then lower the temperature to 200c & bake for a further
30mins. Remove from oven & allow to cool upside down.
Serve with butter.
Dublin Coddle
450g sausages 450g bacon
1 large onion diced 5 carrot sliced
5 potatoes peeled & cut into chunks
vegetable stock salt & pepper
parsley
Put the meat & vegetables into a large pot & pour over enough
stock to cover. Bring to the boil & simmer for 1 ½ hours. Season
& garnish with the parsley. Serve with white soda bread.
Colcannon Cakes
400g of potatoes 150g of cabbage
20g of butter 1 egg beaten
Salt & pepper 3 tbsp of flour
Cook the potatoes for about 25mins in boiling salted
water until tender. Peel while they are still warm & mash
with some butter. In a separate pot, cook the cabbage
until tender & drain. Put the cabbage into a blender &
whiz until smooth. Mix the potatoes & cabbage together.
Stir in the beaten egg & season. Shape the potato cakes
into 2.5cm rounds. Dip in the flour & shake off any excess.
Heat the butter in a frying pan & fry the potato cakes until
golden.
